Northern Chinese flavour with a clear sense of identity.
After 26 years running one of Johannesburg's most respected Chinese restaurants, Emma Chen made the decision to go back to her roots: the noodle-based cooking of northern China, where rice barely features. The result is PRON, the People’s Republic of Noodles. Here, the tightly focused menu is built around three pillars: fresh noodles made daily on-site, dumplings (steamed or pan-fried), and xiao cai, “small dishes” inspired by the casual tapas-style eateries Chen grew up frequenting with family. Expect generous use of spring onion, coriander, garlic, chilli and Sichuan peppercorns, delivering dishes that are bold and refreshing in equal measure. The space has a cool, slightly gritty energy that feels intentional and entirely in keeping with the food.
