If you’re in Pretoria but mentally you’d like to be on an island somewhere in Greece, then get yourself to Prosopa in Waterkloof Heights, with its coastal palette, villa aesthetics and spacious verandah. Here, chef-patron Dino Fagas pairs Mediterranean cuisine with premium South African ingredients for a menu that is part comfort food, part culinary adventure. Starting with meze to share is non-negotiable once you’ve seen the selection (from lamb arancini and grilled bifteki stuffed with feta, to kataifi prawns, crispy-fried brinjal and perfect spanakopita). The specialty mains, pasta and risotto sing with the South-African-Greek fusion (for example, the ostrich fillet with butternut pureé, seasonal vegetables and Greek lemon potatoes). Prosopa doesn’t mess about when it comes to wine, either. Sommelier Moses Magwaza has built an award-winning list, and the menu offers thoughtful pairing suggestions.
Don't leave without trying:
A meze platter to share (dolmades, keftedes, spanakopita, lamb arancini, fried brinjals, skordalia, patiti, sundried tomatoes, pesto and pita). For dessert, chef Dino’s choice is galaktoboureko, a Greek milk tart composed of panna cotta, phyllo pastry shards, honey, coffee soil and lemon syrup.
