Chef Richard and his kitchen team draw on traditional Italian recipes, harnessing the smoky flavour of a wood-fired Inferno oven for the steaks, grills and Neapolitan pizzas they send through the pass. The seafood in particular – the likes of sole thermidor or the zuppa di seafood curry – is bright and flavourful.
