Meanwhile, the mix of intimate booths and smaller tables, all of which are usually occupied, gives the cathedral-like space a surprising warmth. Chef Thabo’s menu centres on open-flame cooking, with the kitchen transforming everything from classic steaks to fish, poultry and more adventurous meats into deeply flavourful, beautifully plated dishes. Each course feels deliberate and expressive, balancing technical skill with bold African identity. From the remarkable space to the polished service, Mábu is intent on turning dinner into an occasion.
