Chef Moses Moloi treats every dish as a narrative, weaving cultural history into a menu that blends Mediterranean sensibility with proudly South African ingredients. Sorghum, samp, morogo and pap appear alongside ceviche, risotto and chimichurri without ever feeling forced. There’s the likes of a cassava waffle with buttermilk fried chicken, cabbage slaw and chilli honey for breakfast, or, on the mains menu, grilled beef tongue with spiced creamy samp, pickled atchar foam and chakalaka. The carefully considered interior matches this sense of meeting traditions.
